CLASSIC DOSA IDLI BATTER

HOW DO WE MAKE IT?
Maintaining and carrying forward a tradition is not such a simple thing. Even for something like idli and dosa batter. So I have made it almost like an unsaid rule at CURRY PATTA a classic should always remain a classic. Strictly no tampering! 

I have made this idli and dosa batter using basic ingredients like Rice, Urad Dal and Poha and added salt to it. Every ingredient sourced from the best. Then of course, a good patient stone grind follows to create a beautiful creamy batter. Fermented just right, it is full of vitamins and minerals, but low in calories. Exactly how a good old batter should be!

ALWAYS FRESH - I love to see a fresh batch of this simple batter every day. Why? It simply is a pleasing sight. It also feels good to know that it is going to be used by a homemaker or someone else, to prepare a simple yet healthy and tasty meal. That is enough to please the chef in me! 

HOW TO USE THE BATTER?
For best results
• Rinse the pack under running water.
• Bring the refrigerated batter to room temperature.
• Stir it well to a good consistency add water if needed.
• Taste the batter and add salt if you want to.
• For making idlis simply scoop up a portion of batter and pour it into the greased idly moulds.
• For dosas pour a ladle full of batter out on to a well-oiled pan and spread it evenly.


HOW DOES IT TASTE?

Whatever you plan to make – Idlis or Dosas - anything made from this healthy batter brings out the real time tested and traditional taste. Just irresistible!

 RAGI DOSA IDLI BATTER

HOW DO WE MAKE IT?
The fast times we live in, has meant that we have less time for food. So as a Chef, I have always thought of coming up with something that can be delicious, filling, yet carry that punch of great natural nutrition. 

Oh yes, and it should appeal to the new age millennial and even the homemaker too!

So with careful study, good insights and some smart experimentation, I came up with a traditional batter mixed with finger millet or Ragi, as it more popularly called.  In this batter I simply substituted rice for Ragi, used split skinless Urad Dal and added salt for taste. A good round of stone grinding and the batter comes to just the perfect smooth consistency. A long spell of at least 8 to 12 hours of natural fermentation and the batter rises to a good volume with a beautiful, dull earthy colour. 

This wholesome batter contains more than 60% ragi. Every bite of food made from this batter is a rich source of calcium, minerals and fibre. It assists in in weight loss, controls diabetes and lowers cholesterol levels. Easy to digest for even kids. Truly awesome in every way.


ALWAYS FRESH – A fresh batch of this super healthy batter has to be ready for delivery every day. Why? Because I know how good it is for the health of everyone. That is motivation enough for me!

MULTI GRAIN DOSA IDLI BATTER

HOW DO WE MAKE IT?
One of things that truly challenges and excites me as a chef - is the opportunity to experiment with combining traditional ingredients and creating a tasty and nutritious batter from the whole mix.  My multi grain batter is a result of one such experiment and it adds a tasty twist of health to an anytime meal. 

In this batter, I have maintained the traditional base of rice and other basic millets. To add drama to this batter, I throw in a good measure of other millets and gram. I let this mix enjoy a good stone grind and lovingly watch it reach a beautiful consistency. Soon a multigrain batter that is literally bursting with vitamins and minerals is ready!

ALWAYS FRESH - I insist on making a fresh batch of this batter every day! Why?  Simply because I love to see people eating healthy food and homemakers cannot seem to get enough of this batter for their family! The chef in me is really proud of this creation.
